This will be so fun to share, not only for those that don't know what to make, but sharing new challenges for the chefs to master.

Base
3/4 cup butter, at room temperature
1 cup sugar
1 egg
1 1/2 cups flour
1/4 tsp baking powder
1/3 cups coconut
Topping
1/2 cup slivered almonds, plus more to sprinkle over bars
1/2 tsp vanilla
340 g jar apricot preserves or any other flavor

Heat the oven to 350. Line a 9 x 13" baking pan with foil sprayed with cooking spray.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg to the creamed mixture and mix well until fully incorporated. Whisk together the flour and baking powder in a separate bowl. Add this mixture to the butter mixture. Stir in the coconut, slivered almonds, and vanilla until well blended. Press 2/3 of the dough evenly into the baking pan. Spread a layer of apricot preserves over the pressed dough. Crumble the remaining dough over the top of the preserves. If desired, sprinkle additional slivered almonds on top for extra crunch. Bake at 350 for about 30 to 35 minutes or until golden brown. Allow cooling before cutting into squares

Ingredients:

4 cups of flour

1/2 cup of sugar

1tsp salt

8 level tsp. baking powder

*2 blocks margarine (1cup)

*The 2 blocks of margarine - cut up and mix with dry ingredients (use a fork).

In measuring cup put 1 1/4 cups of milk and add 2 eggs and mix. Slowly add liquid to dry ingredients, mix together.

Turn out on floured board, knead until nice round ball is reached. (about 1 minute)

Roll out on floured surface. Roll out to about 1/4 of an inch thick or a little more.  Spread with soft butter or margarine, cover with brown sugar, and sprinkle with cinnamon to your liking. Roll up and cut to desired thickness, (I do 1.5 inches). I double pan because I find the bottom will burn easy. Also use parchment paper.

Bake at 450 F, for 13 - 15 minutes.
